The restaurant might be new but the Head Chef also the Owner of the restaurant cafe, Ton That Vinh is a familiar face.

Used to work in top restaurant in Sydney as well as Bobby Chinn Hanoi, Shri Lounge and An Lam Saigon River, after 15 years working from the scratch, Vinh is excited to present his own self restaurant café in Vietnam opening since September 2013.

Located in a small villa in an alley connecting Dien Bien Phu and Hai Ba Trung street, Dine Viva is simple in terms of décor but mostly to create a warm cozy ambience with different spaces, suitable for groups from 4 up to 50 pax, instead the head chef concentrates mainly on food quality, hoping to add a touch of fine dining to a comfortable environment to the customers.

All day serving from breakfast, lunch, afternoon tea and dinner, Dine Viva menu is a combination of authentic Western food using different local ingredients to introduce the chef’s true talent. The dishes at Viva’s once again emphasizes on quality than quantity. Every meal’s menu presents around 10 dishes in order not to confuse the guests.

If you love a Western breakfast, Viva’s menu will please you from the homemade bread and jam to the traditional eggs as well as beautifully presented pancakes. If you must, try his scramble egg, one of his signature dishes. It is a simple dish yet delicate enough that not just any chef can make it good. Chef Vinh makes it perfect.

For lunch, Dine Viva offers simple dishes such as salads, pastas and melts which Cajun chicken salad, pesto pasta, Thai chicken melt are the outstanding dishes among the menu. And don’t forget the healthy non-fat no sugar added smoothies from the bar.

After 6pm, the setup becomes classy and elegant with all the lights, table setting and of course, with the fine dining courses. Dinner menu is more fine dining and luxury with pan-seared foie gras, duck breast, scallop or braised lamb chop, the cuisines made by Chef Vinh during his experience in Sydney. What’s good for dinner? It’s hard to choose from, however, pan-seared foie gras served with star fruit receives the highest votes. The light sour taste of star fruit will balance the fat delicious of the foie gras.

Dine Viva also offers the perfect place for a chic afternoon tea including 2 tea and cake packages for 2 and 4 persons in a green and peaceful area. Mentioning sweets, it could be guaranteed that no one can ignore the restaurant café’s irresistible desserts such as flan caramel or panna cotta, Chef’s heavenly treats.
